FFFC Version of Golden Harvest Salad


I found this delectable looking salad on this site here:  http://www.choosingraw.com/golden-harvest-kale-salad/.  The salad looked so beautiful on the page I had to try it myself.  I went to the store and purcahsed the produce I was out of.  The kale is gone in my house but the quality in the store left a lot to be desired so romaine lettuce it is.  I figured it was hardy enough.

I have it in the fridge to get cold and crisp.  Try it you might like it.

Ingredients:

For salad:

2-3 cups washed, dried, and chopped kale (I used romaine lettuce)

1 small carrot, grated

1 stalk celery, chopped

2 tbsp golden raisins

2 tbsp chopped walnuts

1/2 apple, sliced thin.

For the dressing:

2 tbsp olive oil

2 tbsp apple cider (fresh, local, and unpasteurized, if you can get your hands on it!)

1 1/2 tbsp apple cider vinegar

1 tbsp agave

Salt and pepper to taste

 

Cooking Instructions

Mix together and ENJOY!  Enjoy your #saladjam!
